Peach and Avocado Mousse

3 medium very ripe Peaches (peel if not organic) 
1/4 ripe large Avocado
4-5 leaves of Baby Spinach
1/2 tsp Cinnamon
1 tsp grated Coconut
1-2 Walnuts or Pecans

Add peaches, avocado, cinnamon, and spinach to the Vitamix Blender. Blend well for a few seconds. If need it add a tablespoon of Coconut water. The consistency should be like for a mousse or  a pudding. Empty the mousse in a cup, sprinkle some grated Coconut on top and a few Walnuts. Nice and creamy!

Yields ~ 1 cup

Sugarfree Chocolate Mousse

2 medium ripe Bananas
1/2 ripe large Avocado
2 Tbsp quality Cacao powder
2 Tbsp Coconut Water
1 tsp Vanilla
1 Tbsp grated Coconut
1/2 cup Raspberries

Add banana, avocado, cacao powder, vanilla and the coconut water to the Vitamix Blender. Blend well for a few seconds. If need it add another tablespoon of Coconut water. The consistency should be like for a mousse or a pudding. Empty the mousse in a cup, sprinkle some grated Coconut on top and a few Raspberries. Yummy!

Yields ~ 1 cup

Avocado and Carrot Spread

1/2 ripe large Avocado
1 medium Carrot
1 tsp Capers
1 tsp Lemon juice
1-2 tsp chopped Dill (or about 8-10 fresh springs of Dill)

Add carrot, avocado, capers, dill and lemon juice to the food processor. Blend well till smooth. Enjoy with crackers or on a fresh slice of bread with some tomatoes.

Nut Free Pesto

3/4 cup ground shelled Hemp Seeds
2 Tbsp ground Flax Seeds
2 cloves Garlic
3 cups chopped fresh Basil
3 Tbsp Nutritional Food Yeast (optional)
~1 cup Water
3 Tbsp Lemon juice
3 Tbsp Olive Oil
Salt & Pepper to taste

If the seeds need to be ground then add first the seeds to the food processor and grind till they are powdery, then add the basil and the garlic and pulse till basil and garlic is finely chopped. Add the rest of the ingredients and pulse till the pesto is thick but not watery. Stop the food processor from time to time to scape the bowl. Add a bit more water if need it.

Yields ~ 1.5 cups

Sweet Potato and Chickpeas Dip

1 large Sweet Potato (cooked and peeled)
2 cups Chickpeas (1 can)
1 tsp Curry
1 tsp Garlic powder
3 Tbsp Tahini
1/2 tsp Pepper
1/2 tsp Chili powder
3/4 cup water

Add all ingredients to the food processor. Blend well till smooth. Add more water if need it. Enjoy!

Yields ~ 3-4 cups
